Are you direct copying (ie. not Sync from MMW to MMA)? In that case you're relying on the Android Media Scanner to read file tags and it's known to have problems. With Sync you avoid this as MMW will directly write tags to the MMA database.

You can still use MediaMonkey 4 if you need this capability, for now data disc burning seems unlikely to return.

You can edit Properties on multiple files and all changes you make will be saved to all selected files.

I'd remove the new UNC files, then use Locate Moved/Missing Files to locate the Mapped files on the UNC Paths, after first making a database backup.

You can delete from the Location node.
Do note that if you remove the Mapped Drive that the files will be removed from any Playlists they're on and unsaved data (like Play History) is lost.

UNC would be preferred. However if you don't scan the incorrect Path, the files won't duplicate.

When you use Show all under Devices it still isn't listed? Could it identify itself as the old phone? Also which Build (Help > About) of MMW?

That's correct. You can either copy/move files first, then scan or you can move files with MediaMonkey.
