many of the artists in my library don't show up on the synch screen when configuring ipod sync properties.

It depends on which filter you have selected on the Music tab. And in addition all filters on the Music tab are excluding from showing podcasts and audiobooks. Such tracks / Artists can be found on the other tabs.
