I've been using MM extensively for Music so far, but would like to start importing my Videos now as well.
My Videos are sorted in a certain way (filename, folder structure) and would like to exclude them from the auto-organizing feature of MM. I tried the Auto-Organizing with Videos before, but it completely messed them up.
Is there a way to leave the Auto-Organize on for Music, and turn it off for Video Import, so that my file and folder structure is kept for Videos?

Yes, you can configure auto-organize rules at Options > Auto-organize. Just set your rule to only include the "Music" collection.

If you don't mind, I had two more questions:
1. Is there a way to let Videos automatically start in Fullscreen mode upon play?
2. Will there be a consideration in the future to Add a Node called Movies, as there is currently only one for Series. Basically like a subcategory for Video (Series, Movies)?

2) Movies isn't a field whereas Series is. You may want to create a separate Collection for Movies (what I do based on Path criteria).
