Can I remove entries from the 'auto-organize' drop down menu?

Yes. In your MediaMonkey.ini file located at:

Windows XP: C:\Documents and Settings\<USERNAME>\Local Settings\Application Data\MediaMonkey

or

Windows Vista: C:\Users\<USERNAME>\AppData\Local\Mediamonkey

look for the [RenameMasks] heading and remove whatever Masks you don't want to appear. MM will have to be restarted before the changes take effect.
